Durian Butter Cake

I seldom bake recently, life without baking is just so boring and dull. I found an excuse to bake a butter cake last week that had shared with my cousin and family. Although it's just a simple cake, it makes me feel better touching the kitchen stuffs. After the first attempt on berries butter cake, I would like to give it another try on durian flavour, and also took this opportunity to use a new cake mould. I'm not sure it's called bundt mould or something else, correct me if I'm wrong. Beside berries, durian is also one of my favorite fruit. So, I came out with this durian butter cake. The taste is very flavourful indeed with the slightly moist and rich texture. I feel the bundt cake mould make it looks prettier rather than just baking in a flat baking tray. Hope you will like this recipe of Kevin Chai. His recipes is quite simple and nice. Don't forget to use the sweet and flavourful durian and you will get the result.
Recipe:
250g butter
170g caster sugar
4 eggs
250g durian flesh
230g self raising flour
1/8 teaspoon baking powder
1/4 teaspoon bicarbonate of soda
  1. Grease a baking mould. Preheat oven to 170C.
  2. Beat butter and sugar until light and fluffy. Add in eggs, one at a time, beating thoroughly after each addition.
  3. Stir in durian flesh. Fold in sifted flour, baking powder and soda. Mix until well blended.
  4. Spoon batter into prepared mould. Bake in the preheated oven for 45 minutes or until cooked.

Your durian cake looks great! I think it will still look good baked in a normal pan :) Can you still taste the durian after it is being baked? I tried baking with durian, but I couldn't taste it in the finished bakes :(

It looks perfect! I have tried baking durian sponge, but not in butter cake form. This is awesome. I really need to get a bundt pan. Cakes always look extra pretty this way. :)

Oh my gosh, your durian butter cake look perfect! So smooth and beautifully brown. I have to wait till I go back to Malaysia to make this as I am able to get good durian. The durian here is bad. They came frozen and they are from Thailand.

Thanks! The taste is depend on how rich to your taste. It's not as rich as the durian cheesecake. I didn't tell my aunty it's durian cake until she had the first bite on it and said "oh durian cake !" The cake very much depends on the quality of durian we use.

So happy to see start baking again. This was the bundt mould you have? It's so gorgeous! Don't you just agree that the pan makes a lot of difference? I think if it's baked in a rectangular loaf pan, the effect won't be as pretty, yah? I like the eveness you achieved in this cake. So pretty!

You've mentioned the cake is baked at 170 degree. May I know are you using top and bottom heat or are you using fan mode?

Thanks for the explanation :) I guess I must have used too little durian flesh, or those I used are not so fragrant. So many times I ended up eating the durian before reserving it for baking ;)

No problem, we can always exchange our experience. I think fragrant durian would help to give the cake better flavour. But don't use 24D for baking, rather eat them, don't waste it yea :)

For those interested in a smaller similar cake tin or mold, this is available on ebay. Will make Two cakes! One to keep and another to give away so you wouldn't feel too guilty.

This looks delicious! I love that you used durian. I bet it gave the cake an amazing taste. I will definitely try to make this in the future! =)
