Hello! I'm still alive! Please don't forget about me. I know I haven't been doing much baking but I'm still reading all your lovely updates. Here is the latest update of my baking, Lemon Pound Cake. It's very unusual of me baking a butter cake for my own consumption.
Well, this is my first attempt on pound cake and I choose the most easiest recipe and also my favorite lemon flavor. Another reason for choosing this recipe because the batter is small enough to fit into my Daiso pound cake pan. I'm quite happy with my first pound cake. It's nicely baked and the lemony taste gives the cake a lighter texture. I use to bake banana loaf cake to give away and now here is another good choice. I like this pound cake and hope you do.
Recipe from 点心达人，轻松学
(Pound cake pan 18 x 8 x 6.5cm)
120g plain flour
1/3 teaspoon baking powder
120g unsalted butter
50g caster sugar (I used 30g)
2 egg yolks
2 tbsp fresh lemon juice
1 lemon zest
1 drop vanilla extract
2 egg whites
50g caster sugar
- Grease and line the pound cake pan with baking paper. Shift the flour, baking powder and ground almond.
- In a clean bow, beat the butter then gradually add in the caster sugar until the sugar dissolved into the butter and the mixture become pale in color.
- Mix in the egg yolk one at a time until just combine. Then mix in the lemon juice and zest together with the vanilla extract.
- In another clean bowl, beat the egg whites with a pinch of sugar until the bubbles appear then add 1/3 of the sugar. Gradually beat in the rest of the sugar until the egg whites become peak foam.
- Gently mix in half the egg whites into the butter lemon mixture, don't have to mix too much. Then mix in half of the flour ingredients and combine everything.
- Gently fold in the remaining egg whites then add the remaining flour ingredients until well combine.
- Pour the batter into the pound cake pan and bake in a 170C preheated oven for 10 minutes.
- Took it out and use a knife to cut a line at the center of the batter, continue to bake for 35 to 40 minutes until and skewer insert into the cake and come out clean.
- Let it cool down on a wire rack and enjoy!
The slit looks really neat.
They look like gold slice, beautiful and good.
Lovely lemon pound cake you got there.:) Good one! Nothing more refreshing then a nice slice of that. ;) BTW, I am really curious how you get that corner lemon to stand do nicely upright, lol!
Hey, beautifull pound cake you have there! The cake slices looks so soft and moist. Nice!
What a lovely pound cake! I like all the recipes from this book :)
Nice.....did you mean the zest of 1 lemon? Sorry but how big is your lemon? I always have issues with size of lemon.
Your pound cake look so fluffy and citrusy in colour. Nice slit too.
That is a lovely pound cake. I always like citrus flavor in cakes. I am sure whoever is going to receive this cake will be very happy.
Finally I get to see you baking! I'm so happy! Your lemon pound looks really refreshing! I've often seen lemon pound cakes, but it's one recipe that I've not tried. I must really try it someday. I'm quite a "citrus" person. Thanks for sharing the recipe, and the beautiful pictures!
Looks gorgeous! And not too heavy. I think lemon might be my favorite baking fruit... I've done lemon cake, lemon pudding, lemon cheesecake... =)
how come it's unusual to bake butter cake for own consumption?
I guess I'm not a very butter cake person either. Always prefer light cakes :)
Your lemon cake has got me hooked up. Really want some now..
Your cake look beautiful. Nice brown and with fine crumbs. I always love to put some citrus flavor into my cake. I am sure whoever reciving this cake from you will be very happy.
WHat a beautiful cake! With the nice fissure in the middle, thanks for giving tips on how to achieve that because my pound cake always seem to have very ugly cracks.
Same like you, I've not been baking that much and blogging. Your lemon pound cake looks good, especially with a cup of hot coffee or tea!
Glad to see you again. The lemon cake looks very nice.
I'm not a fan of pound cakes but I definitely love lemons! Your pics make me wanna bake one right away!
Oooo....nice one! Like the colour of the cake, GOLDEN! It must be very delicious.
Hello, all my lovely readers! Thanks for remembering me and leaving your encouraging words. Hey, Bee! That lemon at the corner standing upright is the fake one :P It's a lemon container to store those cut lemon which will not be using immediately but the others are real one :) Hi Quinn, I used one big lemon zest. It doesn't matter if it's medium or small or big, the zest is just to give the cake a nice aroma, the more you add in the more lemony smell you will get. Hi Jane, yes I'm back but I've been baking less lately. I'm also a very citrus person, hope you will like this recipe. Hey TracieMoo, it's really difficult for only me and my husband to finish up a loaf of butter cake that's why it's quite unusual for me to bake this. I think a loaf for two is too much for our body. Hey quizzine, that's truly an enjoyable moment having a cup of tea with this lemon pound cake.
Grace, I've never forgotten about you! How can I do that with all those spanking-good bakes of yours! And I can perfectly understand that life gets damn hectic, too, which is what's happening to me!
I love how the top of the loaf cake splits! So beautiful! Lemon pound cake is such a classic, I'm sure I'll give it a try, too ... eventually ...
Keep it up!
Grace..your lemon pound cake looks moist and delish. Each time I drop by I get to see beautiful bakes from you :) Thanks I am virtually fed thru the window :p

Hi Baking Queen,
I've no experience on cream cheese pound cake yet. Perhaps "Passionate About Baking" could help you with this. This lemon pound cake was my first attempt, sorry to tell that I have not try to replace butter with cream cheese so hardly give you advice. Thanks for dropping here!
Hi, I'm here to thank you for the lovely recipe. I just baked this cake for my girl's birthday and all my guests loved it! ;)
hi, do you have the recipe to make choc pound cake? the lemon pound cake looks extremely nice and i want to try making another cake for my friends who dont like lemon. THANK YOU VERY MUCH! :)
Thanks for dropping here. I'm sorry that I still haven't got a chocolate pound cake recipe. Please browse through others blogger as I've seen many of them had made chocolate version. Cheers!
I was captivated by the beautiful picture of how moist and high and the slit of the pound cake. I couldn't resist just looking and tried the recipe for myself.
However, THE RECIPE DID NOT WORK!
I am a very avid baker and I followed every step and it rose (sort of), cracked, turned golden, after about 40 min. It later deflated and was flat. Nice smell though.
THE OTHER DAY I WAS SURFING FOR POND CAKE AND THE PICTURE OF UR KINDA CAPTIVATED ME.I OOK THE RECIPE AND TRIED IT.WHEN IT CAME OUT OF OVEN IT WAS EXCELLENT IN SMELL TASTE AND TEXTURE BUT ON THE NEXT DAY IT BECAME SUPER EXCELLENT.FOR SHARING THIS RECIPE I OWE MORE THAN THANKS TO YOU.AM A MUSLIM AND WANNA PRAY TO ALLAH THAT HE MAY BLESS YOU IN EVERY WAY.I TOOK THE SAME CAKE TO MY OFFICE TOO AND MY COLLEAGUES COMMENTED THAT NOW ON YOU ALWAYS MAKE A CAKE FOLLOWING THIS RECIPE.TWO THINGS I NEED TO ASK THAT HOW COME YOUR CAKE IS PALE MINE WAS WHITISH THOUGH I USED ORGANIC EGGS.DID U ADDED FOOD COLOUR? AND DID U BLANCED THE ALMOND BEFORE POWDERING THEM?
THANK YOU VERY MUCH.
hey can you please tell me if you used all purpose flour?i mean is there a difference between plain flour and all purpose?
just tried your recipe (used self-raising flour instead as I had no plain flour) and it turned out really well! Smells lovely and lemony.
I tried the receipe yesterday . The taste is fine: i added more lemon juice as well as lemon custard. The cake stayed flat and even deflated if i may say so. I suspected that this may be due to opening the oven after 10 min. Any idea what could have gone wrong?
Just tried this recipe. It is one of the easiest and most tasty cake I have ever made. The lemon taste is jus so refreshing! I was out of butter so I substituted it with canola oil.. and it turned out to be awesome. Thanks for sharing such an awesome recipe.
